Tunisian Sardine Meatballs (Shebtia)

Tunisian Sardine Meatballs, often referred to as Shebtia or Keftet Sardine, is a popular, affordable, and nutritious staple in coastal Tunisian cuisine, frequently enjoyed during the summer or in special dishes.

Instructions

Gut and clean sardines; remove scales, heads, and tails. Debone them.

Cut fish into small pieces or pass through a meat grinder.

Knead the fish with onion, parsley, breadcrumbs (white bread), spices, and eggs.

Form small balls and press them flat.

Fry in oil on both sides until cooked through.

Serve with tomato sauce, garlic, and baguette.
