Gut and clean sardines; remove scales, heads, and tails. Debone them.
Cut fish into small pieces or pass through a meat grinder.
Knead the fish with onion, parsley, breadcrumbs (white bread), spices, and eggs.
Form small balls and press them flat.
Fry in oil on both sides until cooked through.
Serve with tomato sauce, garlic, and baguette.
