Coconut-Saffron Prawns

Cut prawns in half lengthways (keep tail intact).
Finely chop the inside of the lemongrass.
In a bowl, mix lemongrass, shallot, ginger, garlic, spices, and oil. Toss prawns in the mixture.
Cover and leave to rest in the fridge for 1 hour. Place the lemongrass mixture in a pan (without prawns) and cook over low heat for 5 minutes until aromatic.
Add coconut milk, salt, and pepper. Bring to a boil.
Add prawns and simmer for 3 minutes until pink. Serve in a spoon at room temperature.
